The fresher the coffee, the better it is. Minimising the time from plant to cup is vital. Coffee is fresh produce and so is perishable. The flavour and aroma peaks shortly after roasting, and deteriorates once exposed to air, light, heat and moisture. Oxygen is coffee’s enemy!
