As the main ingredient, water significantly affects the taste of the brew, especially for those with a sensitive palette. Fresh, cold water containing plenty of oxygen is needed to extract the full flavour and quality of tea and coffee.

Tap water is required to meet stringent quality regulations to ensure it is safe to drink. Rain water is naturally soft but becomes hard as it collects minerals, mainly calcium & magnesium, from the ground. Most areas of the UK have soft to medium water but the south-east is predominantly hard water. The simplest way to determine water type is the lather / froth test. Soap lathers easily when agitated by soft water; whereas in hard water it’s a struggle. Affordable domestic water softeners are available.
